Romaine lettuce is back! After an E.coli scare, romaine lettuce all over North America was recalled and pulled off shelves. Last week I saw it back on the shelf and I am happy to have romaine lettuce return to my fridge!
To celebrate, I am sharing one of my favourite salad dressing recipes: Caesar!
Caesar salad is a hit with my whole family, my kids never get tired of it!
Why would you take the effort to make your own dressing rather than just buy it pre-made? Because pre-made dressing contains many hidden not-so-good for you ingredients such as:
-Inflammatory vegetable oils
-GMOs
-Added sugar
-High fructose corn syrup
Making your own dressing is so simple and in my opinion tastes much better than any dressing I've ever bought in a bottle.
I recommend making a double recipe and leaving the rest in the fridge to have on hand for later in the week.
RECIPE:
5 mins.
Serves: 4
Ingredients:
6 Tbsp. of Organic Extra Virgin Olive Oil
1 small clove of garlic, crushed
2 tbsp of apple cider vinegar
1 tbsp lemon juice ( fresh fresh lemons)
2 tbsp mayo (find my healthy mayo recipe here)
pinch of sea salt
1 tbsp anchovy paste (optional)
Instructions:
Mix all ingredients together in a jar, and shake until well mixed.
Recipe Notes: Mix into salad and top with cheese of choice. I love freshly grated Grana Padano cheese on my salad, but parmesan is always lovely too.
