Healthy and Home-Made Greek Salad Dressing

You might be hearing more and more these days about the importance of healthy fats and the need to increase omega-3 fatty acids in your diet.


A great way to increase healthy fats into your diet is to make your own salad dressing using omega 3 rich oils such as olive oil.


I also recommend avoiding store bought dressings, as they contain inflammatory oils and not-so-good for you additives.


This salad is so delicious and easy to make and its a huge crowd pleaser! Even my pickiest kid loves this salad and will ask for seconds.


RECIPE


Dressing:

  • 4 tbsp Olive Oil

  • 2.5 tbsp Apple Cider Vinegar

  • 1 small clove or garlic

  • 1/4 tsp. dried oregano

  • 1/4 tsp. dried basil

  • 1tbsp dijon mustard


Combine all ingredients together in a jar and shake until it will well blended. Set aside while you prepare the salad.


Salad

  • 1 head of romaine lettuce

  • 1/2 large cucumber

  • 1 bell pepper

  • 1 small tomato

  • 1/2 small red onion

  • 1/4 cup of crumbled feta cheese

  • 1/4 cup of black olives

Toss well with dressing and serve immediately.



Note: Double or triple the dressing recipe and keep in the fridge up to 2 weeks.
