Blueberry Muffin Overnight Oats

This is a great make-ahead recipe for those busy mornings. Kids love this, it is full of health benefits and will fuel your whole family all morning long!




Oats have many health benefits, are easy to prepare and are usually popular with the whole family.


Why overnight oats? Overnight oats are a great alternative to cooked oats. Overnight oats are typically prepared the night before and are served cold vs. warm. Soaking the oats overnight helps to release the phytic acid and not only increases the digestibility of the grains themselves, but helps the body to absorb more of the minerals in the food. By soaking the oats overnight and eating them cold, you are able to consume more resistant starch. Resistant starch help to keep your blood sugar stable, and acts as a prebiotic to keep the gut bacteria in your gut happy!


Overnight oats are so versatile and there are many variations to keep things fun and exciting! This version uses blueberries and using the word "muffin" helps my kids think of this as a bit more of a treat!


RECIPE

Serves: 2

(multiply according to # of people being served.)


Ingredients

  • 1/2 cup old fashioned oats

  • 1 cup of your favorite milk ( I often use almond milk or cashew milk. Coconut milk is a great source of fat, especially for children.)

  • 1 tsp vanilla extract

  • 1 tbsp honey

  • 1 tsp cinnamon



Toppings:

  • Fresh or frozen blueberries

  • OPTIONAL: chia seeds, hemp seeds, walnuts, sunflower seeds, cream.

Mix 1st 5 ingredients in a bowl/jar and place in fridge overnight. In the morning mix in blueberry and desired toppings.


NOTE: This also makes a great after workout meal, or healthy dessert.


TIP: Adding protein and healthy fats such as nuts and seeds will help to stabilize blood sugar. Stabilizing blood sugar levels in the body is important for weight loss, concentration, energy and mood stabilization.
