Gluten-Free Black Bean Cake

I have for a long time referred to this recipe as my 'one hit wonder'. You see, I don't enjoy baking, but if I needed a birthday cake, or am asked to bring a dessert somewhere, this recipe has always been my go-to. I need to make something that is gluten free for my son, but I also don't like to add refined flours or white sugar into anything I make. I like food to be high in protein, full of fibre but something that other people will still enjoy!




No one can believe that it is made from black beans, and texture is amazing!


I make this recipe often to pack for school lunches for my kids or as a treat for a birthday or party.


RECIPE



  • 1 can of black beans

  • 5 eggs

  • 1 tsp vanilla extract

  • 6 tbsp of coconut oil or butter ( I often use 3 tbsp of each)

  • 6 tbsp of cocoa powder

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp. salt

  • 1/2 cup of honey, maple syrup or organic coconut sugar.


INSTRUCTIONS:


  1. Preheat oven to 350 degrees.

  2. Rinse black beans well and place in large mixing bowl.

  3. Add eggs to black beans and mix throughly with an immersion blender. (Until smooth)

  4. Add rest of ingredients and mix until well blended.

  5. Pour batter into a greased 9x9 baking pan.

  6. Bake for 40-45 mins.
